I want to purchase a generator that can drive the AC in our 189, but we tow with an Expedition SUV. Any suggestions on how to most safely transport gasoline to fuel the generator? Thanks.

Propane kit or jerry cans are about the only two options.

Type 1 or 2 Safety Can. Eagle and Justrite are two common brands. Much safer than the department store plastic ones. Or, see if one of those gas siphon hoses will work so you can pump gas from the car - some vehicles have blocks in the fuel filler which prevent that. Then you're going to want something which seals to store it in - .50 cal ammo can?

How are you going to carry the generator?

Rotopax makes some clever products for fuel storage and transport. Shouldn’t be too hard to rig a lockable mount on your SUV.

Mikes makes a good point though: Fuel storage is only one issue. Even small gensets are bulky and heavy and will be difficult to securely store outside of the vehicle. Storing   inside the cargo area is problematic due to fuel vapors. We tow with a pickup, so the genset and gas can are chained to the bed under a tonneau cover in open air external to the passenger compartment.

Thank you for your replies. After further consideration I have decided that a propane conversion is the safest way to go with internal transportation.
